2- Separate the broccoli flowers into small bunches and remove the toughest stems.
3- In a pot, put plenty of salted water and bring it to the fire.
4- When the water starts to boil, add the broccoli sprigs and let them cook for a while until they are tender but firm. Remove and reserve.
5- In a frying pan, add the oil and bring to low heat.
6- When the oil begins to heat up, add the minced garlic and parsley, and sauté them for a few seconds.
7- Next, add the broccoli flowers and sauté again.
8- Beat all the eggs in a bowl, season them, and add them to the pan with the broccoli. Cover and cook over medium heat until the eggs are set.
9- Turn the tortilla over and over, period.
10- Remove and serve together with tomatoes. Enjoy your meal!
